Sweet-Potato Pancakes with Honey-Cinnamon Butter

  • teaspoon ground cinnamon
  • 2 whole eggs
  • 1 cup buttermilk
  • tablespoons vegetable oil
  • 1 cup pancake mix
  • 1 pinch ground nutmeg
  • 1 whole sweet potato
