Stuffed Pepper with Mushrooms, Greens, and Ground Turkey

A hearty and nutritious dish featuring bell peppers stuffed with a flavorful mixture of ground turkey, wild rice, mushrooms, and leafy greens, topped with crunchy pumpkin seeds. Perfect for a healthy and satisfying meal.

Ingredients

  • •12 ounces lean ground turkey
  • •1 whole onion
  • •½ cup whole garlic cloves
  • •2 cups sliced mushrooms
  • •4 cups chopped greens
  • •2 cups water
  • •1 cup wild rice
  • •1 cup raw pumpkin seeds
  • •1 teaspoon hot sauce
  • •6 whole bell peppers
  • •halved
  • •seeds removed

Cooking Instructions

  1. 1.

    Cook turkey in a skillet lightly coated with cooking spray or olive oil. Stir in chopped onion, garlic, mushrooms, and greens. Allow to steam slightly. Add 2 cups water and then stir in the rice. Cook covered 30 minutes or until rice is tender.

    Add pumpkin seeds and hot sauce, if desired.

    Place peppers hollow side up in a baking dish and stuff with turkey mixture. Bake, covered, for 1 hour or until peppers are tender.
