Okra with Scallion, Lime, and Ginger

A light and flavorful dish featuring tender steamed okra tossed with aromatic scallions, fresh ginger, and bright lime. This healthy side dish combines Asian-inspired flavors with the unique texture of okra.

Ingredients

  • •1 pound small to medium okra, trimmed, leaving tops and tips
  • •1 cup chopped scallions (about 1 bunch)
  • •3 tablespoons vegetable oil
  • •1 piece peeled ginger, cut into very thin matchsticks
  • •1 whole lime wedges

Cooking Instructions

  1. 1.

    Steam okra in a steamer over boiling water, covered, until just tender, about 7 minutes. Transfer to a serving dish.

    Cook scallions in oil with 1/2 teaspoon salt in a small skillet over medium heat, stirring, just until softened, 1 to 3 minutes. Pour over okra and toss with ginger. Serve with lime wedges for squeezing over okra.
